Scope and Contents

The pilot project, Oklahoma Indian Council Dietary Component Cooking and Nutrition Project, aims to address poverty and its effects on minority groups in Oklahoma City. The project focuses on improving food habits, teaching budgeting and food selection, compiling healthy recipes based on Native American cooking customs, and promoting fellowship among participants. The project will be conducted over five years and includes specialized curriculum development, cooking and nutrition courses, and teacher training. The goal is to provide resources and education to help individuals in lower income groups improve their diets and health.
